Menu Plan: Week Thirty-Seven

Last week was a crazy, busy week. We made it through our menu plan, though - even entertaining on Friday night (with the awesome sausage and tomato risotto from Smitten Kitchen - will definitely be making that again!). And Sunday's roast chicken will serve me well as I lunch at home through the beginning of the week.

This week is a bit off, with evening meetings for me and friends in town from California, so we're not exactly sure where each night will take us. We've decided upon meals that will feed us well and reheat well if we have some busy, late nights.



Monday: Lasagne (I'm leaning towards spinach/turkey, but we'll see)

Tuesday: I have a meeting till 8:30, so we'll have leftover lentil soup leftover from Saturday.

Wednesday: Boyfriend found this recipe for roasted potato and haddock puttanesca. I'll go to the fish market and we'll have this as our mid-week meal.

Thursday: I have evening plans with a fabulous friend, so I think it will be leftover lasagne for us!

Friday: Found an awesome recipe for a roasted squash salad on Gojee. Yum!

Saturday: We're thinking about some mac'n'cheese... but we know we'll be eating poorly Sunday, so that might change...

Sunday: Superbowl! I'm making my world famous onion dip and Boyfriend is bringing wings. There will be loads of food and drink from our hosts and other lovely friends.
