Menu Plan: Week Forty-Four

Gentle readers, as we come into another week, I'd like to share with you that creating this menu plan is not as easy as it may look. Many weeks, it takes both Boyfriend and your MatchGirl hours of back and forth conversation, researching recipes and racking our brains to figure out what it is that we want to eat.

Some weeks, this is super fun. It's time we can spend together, talking about our week ahead and about what we might like to do together during the week. Some weeks are hectic and we just don't have a lot of time to come together and make this plan for the upcoming week. This was one of those weeks.



Monday: Meatless Monday and a sunny day call for a light pasta, with arugula and ricotta.

Tuesday: Corned beef hash (with leftovers from Saturday's St. Paddy's Day feast).

Wednesday: Back to keeping it light, we'll try this peanut noodle salad from Marcus Samuelson.

Thursday: Still onto keeping it light, and since it's supposed to be almost 80° F, we'll try this light stir-fry with cashews.

Friday: Friday is usually a low-key, stay in and watch a movie on the laptop night. You know what's awesome for that? Homemade pizza - we may return to this one, with sweet potatoes and brie from Real Simple.

Saturday: These honey-garlic pork chops look simple and tasty.

Sunday: We're watching Mad Men at the apartment on some friends. Not sure if we'll eat dinner before we head over, or if we'll snack once there... I'm OK with leaving this one up in the air ...
