Menu Plan: Week Forty-Three

Gentle readers, the clocks have sprung ahead. It's light out past 5PM. Spring is in the air, I dare say.
Sure, we'll have some cold days, but it's time to start thinking about bright flavors and fresh veggies...

I'm very excited to be planning out forty-third week of menus!

This also means that we're counting down the weeks to the year anniversary, not of this blog, but of living together and starting this little nesting project we've got going on!



Monday: Our friend Anita posted this awesome looking beet capellini on Food52 and we are stoked to try it for a meatless Monday (which we are sooooo bad at sticking to).

Tuesday: I have plans for drinks, so Boyfriend has decided to play "surprise" with something from our freezer stash.

Wednesday: Looks like another sunshine day, so we'll have a Kale salad (we might be addicted!) with some poached chicken or maybe pork chops (I'll have to see what I can get that looks good, and affordable, when I market).

Thursday: I know we'll have some leftover kale, so we'll have a spaghetti with garlicky greens tossed in - similar to the one we made last week.

Friday: Boyfriend's steak and arugula salad

Saturday: St. Patrick's Day - Boyfriend is promising something appropriately themed. Corned beef & cabbage, perhaps....

Sunday: We've started a monthly supper club with a few close friends and this is the first night of it. For our part of the potluck, your MatchGirl will be bringing her world famous onion dip (per request) and a carrot cake...
